Mulled Wine

Serving: Serves 4 - 6


  • 3 cups (750mL) good quality red wine
  • 2/3 cups (150mL) ruby port
  • 1/2 cup (110g) soft brown sugar
  • 2 tablespoons Convict Bitters
  • 2 star anise
  • 1/2 teaspoon cloves
  • 3 bay leaves
  • 2 cinnamon sticks, broken in half if large
  • 1/2 a thumb-sized piece of fresh ginger, roughly chopped
  • 1 orange, cut into segments


  • Combine all ingredients into a large pan.
  • Stir through sugar and gently warm through for 5 minutes (be careful not to let the wine boil).
  • Remove from heat and let it sit for 2 hours to deepen the flavours.
  • Serve warm, ladled into heatproof glasses.
  • Add an extra 2-3 dashes of Convict Bitters.
