Mulled Wine

Ingredients
- 3 cups (750mL) good quality red wine
- 2/3 cups (150mL) ruby port
- 1/2 cup (110g) soft brown sugar
- 2 tablespoons Convict Bitters
- 2 star anise
- 1/2 teaspoon cloves
- 3 bay leaves
- 2 cinnamon sticks, broken in half if large
- 1/2 a thumb-sized piece of fresh ginger, roughly chopped
- 1 orange, cut into segments
Method
- Combine all ingredients into a large pan.
- Stir through sugar and gently warm through for 5 minutes (be careful not to let the wine boil).
- Remove from heat and let it sit for 2 hours to deepen the flavours.
- Serve warm, ladled into heatproof glasses.
- Add an extra 2-3 dashes of Convict Bitters.
